  • Lightly oil grill grate.
  • If they are skinned, wait until cooked to peel off the skin.
  • Sprinkle salt and pepper on one side of fillets.
  • Place fillets over medium-hot coals.
  • Cook about 4 minutes. Then carefully flip the steak.
  • Cook another 4 minutes until the flesh is flaky.

*You might need to adjust cook time to adjust for the thickness of each fillet.

Whisk together
the juice of one lemon
the juice of two limes
1 teaspoon honey (optional)

Pour dressing over chopped items.
Add salt and pepper to taste.

2) Savory?

Heat in a saucepan
1 tablespoon olive oil
Sautee
2-3 cloves garlic

Add
16 ounces diced canned tomatoes
1 1/2 tablespoon capers
¼ teaspoon red pepper flakes

Let simmer for 10 minutes.

This can be served warm or cold.

3) Who Revels in the Heat?

Mix together
1 chopped red bell pepper
1 cup diced pineapple
1 diced onion
3 tablespoons cilantro

Whisk together
Juice of one large lime
1 teaspoon olive oil
One finely minced fresh jalapeno pepper
¼ teaspoon black pepper
½ teaspoon salt

Pour dressing over mixed ingredients and stir well. Let rest for an hour or more before serving to bring out the flavor.
