Want in on one of the best kept holiday secrets? You don’t have to be a baker to make some of the most coveted seasonal treats around. Truffles are one of the easiest, yummies to make and they don’t require turning on the oven or stove. What’s more, you can easily swap out traditional ingredients and ditch the dairy to create a dark chocolate treat that is full of flavonals, calcium, protein, iron, and more goodness.

This recipe uses four easy to find ingredients. Instead of using traditional heavy cream, corn syrup filled chocolate chips and butter to concoct the candies, you’ll substitute healthier alternatives. All you need is unsweetened almond milk, cacao or cocoa powder, coconut cream and dairy free dark chocolate chips that are at least 60% cacao/cocoa.

You can add variety and more nutrients to the truffles by rolling them in anything that tickles your fancy. Try coating them in cocoa or cacao, ground nuts or any of the superfood powders you like. You can also melt extra dark chocolate and drizzle it over the balls.

Here’s the Recipe!

– Put 8 ounces dark chocolate chips into a microwavable bowl. If you want to maximize health benefits, grab a bag that is at least 60% cacao and lightly sweetened. Enjoy Life sells an organic product that is 67% cacao and is dairy and soy free.

– Grab a can of coconut milk. Cans work best because the solids will be separated from the water that gathers on the bottom. Spoon ¼ cup of the solid coconut cream into a small bowl.

– Add ¼ cup unsweetened, unflavored almond milk.

– Whisk the coconut solids and almond milk together until relatively smooth. It’s o.k. if there are few chunks.

– Pour the coconut cream/almond milk mixture over the chocolate. Cover the bowl.

– Place in the microwave and zap it on high until the chocolate is soft. In a small microwave this can take under a minute. So, watch it closely.

– Remove from microwave and whisk the mixture until it is silky and smooth. It should be the consistency of not-quite- thick pudding.

– Refrigerate the chocolate mixture for a few hours until it is quite firm.

Once the chocolate mixture is firm, it’s time to get dirty.

– Have ready a small bowl with 1/3 cup cocoa powder and a small bowl with any ground nuts or other powders or dips you want to coat the truffles in.

– Your hands will get sticky. Coat your palms in cocoa or cacao powder when you’re ready to roll.

– Scoop a teaspoon of the chocolate mixture in your palms and shape it into a small ball.

– Then, roll truffle in either the ground nuts or the cocoa/cacao powder.

You’ll probably have to stop a few times to rinse your hands and recoat your palms with the cocoa/cacao powder.

The truffles can be stored in an airtight container in the fridge for a couple of weeks. But, it’s highly unlikely they will last that long once you and your friends sample the decadent tasting bites.
